Shrimp is such an easy and versatile seafood. I can literally eat it all day long, from Shrimp & Grits (recipe coming soon) to main course for dinner, like I have prepared here. Cilantro Shrimp with Cajun Brown Rice is healthy, flavorful meal and is also so simple to make.
I have made this recipe a number of ways, with parsley along with the cilantro or lime instead of lemon. One thing is for certain, I never leave out the fresh garlic. It’s one of my favorite ingredients and I try to put it in as many dishes as possible. Fresh garlic is my go to, but the powder works well when making your own seasonings. It is rare for me to buy seasoning packets like, taco or Cajun seasonings. I always just make my own. If you are unsure about what to put in them, just read the back of the spice bottle and experiment at home. Don’t be afraid to try to new spices, you may surprise yourself with your tasty mixture. .
- Add all of your ingredients except your shrimp and Cajun seasoning into a food processor or blender. I used my smoothie cup that came with my blender.
- Pulse until the mixture turns into a paste. Simply, pour over your cleaned shrimp and toss to coat. Cover and refrigerate for up to an hour.
- When your hour is up, season with your Cajun seasoning and then preheat your grill to medium. Place your shrimp on the grill for 3-4 minutes on each side and they are ready to serve.
CAJUN SEASONING
- 2 1/2 Tbsp. paprika
- 2 Tbsp. Salt
- 2 Tbsp. Garlic powder
- 1 Tbsp. Black pepper
- 1 Tbsp. Onion powder
- 1 Tbsp. Cayenne pepper
- 1 Tbsp. Dried oregano
- 1 Tbsp. Dried thyme
This will be enough seasoning to use for multiple recipes, I also season pastas, chicken and fish with it.
Cajun Brown Rice
- 4 cups Cooked brown rice
- 1 Tbsp Vegetable oil
- 1/2 Green Pepper /Chopped
- 1/2 Red onion /Chopped
- 1/3 cup Water
- 1/2 Tbsp Butter
- 1/2 tsp Salt
- 1/2 tsp Cajun seasoning
- Heat your oil in a large skillet over medium high heat. Saute your peppers and onions for about 5 -7 minutes, until they start to soften.
- Add your cooked brown rice to the pan, along with the water and stir. Incorporate the pepper and and onions into the rice.
- Season with salt and Cajun seasoning and add your butter.
- Continue to stir until the butter has melted and all the liquid has been absorbed. Plate with your shrimp and enjoy your tasty dinner.
