  1. Scoop avocado flesh into a bowl, and add the lime juice, salt, crushed red pepper (or jalapeno) and any other optional ingredients you want to include. Smash with a large fork while keeping the mixture quite chunky but still incorporating all of the ingredients.
  2. Poach eggs and set to the side. (instructions below). Slice your freshly baked baguette (or toast regular bread) and spread with avocado smash. Top with poached eggs and/or smoked salmon and serve.
