Breakfast Burrito

A Mexican breakfast really hits the spot, there is something about salsa, cheese, and eggs that I cannot resist. As I mentioned in my Lazy Woman’s Skillet recipe, it is also my husband’s favorite. This recipe is a hearty and tasty way to combine my favorite ingredients into one meal.

 

 

The great part about a burrito is, you can really put anything in it. I put one ingredient from each of the following categories: a starch, a protein, veggies, and a sauce or topping. My husband is definitely not a master in the kitchen, my skills would surpass his any day, except when it comes to rolling burritos. I struggled a bit to get these to be as pretty as they are. I have a tendency of over adding. I like to pile ingredients high, which makes for difficult rolling. I hope you have more success than I typically do.

Instructions
  1. Add about 2 Tbsps. of oil to a skillet and heat over medium high. Then take your potatoes and cut them into 1/2 inch cubes and add them to the pan.
  2. Let them begin to brown and then add the onions to the pan, season with a little salt and pepper. Saute for 15 mins until the potatoes are crispy on the outside and soft in the center, then set them aside.
  3. While the potatoes are cooking, cook your breakfast sausage, then season and scramble your eggs. Slice the sausage, add it your eggs and set it aside.
  4. Open the beans and drain all the liquid from the can. Put the beans in a microwave safe bowl and heat for 30 sec on high.
  5. Now it is time to build your burrito! Start with the beans, then potatoes, add the egg and sausage mix and top with cheese and salsa.
  6. Roll the burrito by making sure you close up the sides first and then go from back to forth rolling until everything is nicely enclosed. Place your rolled burritos back in the skillet over medium heat. Let the burritos brown on each side about 1 minute on each side or until they are golden brown
  7. Remove from the skillet and let them cool a bit because they will be hot to the touch, serve with Guacamole and/or your favorite salsa!
