My new life in California is so different than my routine in New York. Since my recent move to LA LA Land, I have enjoyed taking advantage of the warm weather, radiant sunshine, sandy beaches, and the unfortunate traffic. Driving from place to place, instead of walking has seriously cut into my once active lifestyle. As a result, my step counter has been pinging me non-stop to exercise more. So I had to do something about it.

Luckily for me, my new home is very close to the famous Runyon Canyon. The uber popular hiking site filled with fitness fanatics is helping me reclaim my walking roots while enjoying a fantastic view of the city.

To embrace healthy California living, I have been shifting my diet away from the decadence of NYC dining out and trying to satisfy my hunger with lighter and more refreshing options. My focus – less wine, more water! Trust me, the struggle is real! Plus, high-calorie sugary “fitness” drinks just end up doing more harm than good.

During a recent Target run, I picked up an 8 pack of Aquafina Sparkling which has 0 calories, 0 sugar, and 0 artificial flavors. This refreshing beverage in its new Mango Pineapple flavor is the perfect thirst quencher for my upcoming “hike” and it’s definitely more exciting than regular water, without any added sugar.

Hiking Runyon

There are two paths to take at Runyon’s main entrance, my recommendation is to veer right, take the steps to the top and the road back down. Determined and with Aquafina in hand, I forged through and made it to the top, despite having to stop and take a couple of breaks to refresh. The steep inclines of the Canyon gave my muscles the workout they’ve been craving and provided me with some much-needed credit for my step counter.

I couldn’t have picked a better day to test out my new fitness routine. Yes, I am going to try to make this an actual habit with my husband as we strive for a healthier lifestyle.

Refueling

Exercising as we all know, works up an appetite. Now the real test, what to eat after the workout? Normally I would just grab an Italian sub from the local bodega (NYC slang for corner deli). Luckily, that was not an option since LA doesn’t have any corners delis. Conveniently, I had a full fridge thanks to my recent Target run and could avoid a bad meal decision.

Like most people who go shopping at Target, I went in for a few things and inevitably bought a whole cart full of items. The celeb-packed West Hollywood location has a surprisingly great selection of fresh food and pantry items. I found everything I need for to stock my pantry and fridge to prepare a tasty lunch.

Another boring sandwich would not fit my extraordinary afternoon, so I came up with a super simple, easy to make Salmon Salad wrap that paired perfectly with my Pineapple Aquafina Sparkling.

This meal can be prepared with fresh roasted salmon or your go-to canned brand. Tuna and chicken salad are loaded with mayonnaise which can be very unhealthy. This recipe using just 1 tablespoon of mayo is packed with flavor and crunch.

Ingredients

  • 1 lb Salmon
  • 1 Tbsp Mayo
  • 1 Tbsp Dijon Mustard
  • 1 tsp Capers
  • 1/2 stalk Celery chopped
  • 1/2 Lemon juice fresh squeezed
  • Your Favorite Wrap or bread
  • Dry slaw mixture for garnish in wrap

Instructions

  1. Season salmon with salt, pepper, and dill generously and drizzle with olive oil. Roast fillet of salmon in the oven at 400 degrees for about 15-20 mins or until medium well.

    -Alternatively, you can use pre-cooked can salmon or leftovers you have from the night before

  2. Let cool and then use a fork to separate the pieces of salmon and add to a bowl. Then add chopped celery, capers, mayo, and mustard.

  3. Taste and adjust seasoning, add more mustard or mayo if desired. Finish by squeezing lemon into the bowl.

  4. Add to your wrap and serve atop a slaw mixture (mine is kale and Brussel sprouts) for some added crunch. Eat immediately!

This lunch was the perfect way to end my active day in LA. I hope I’ve inspired you to get out to enjoy the sunshine and outdoors a bit more.     I change this to salmon salad sandwiches…..omitted corn, cucumber and used fresh grilled salmon..chopped into bite sized pieces….very good……..thanks for the idea of ingredients.
