I look forward to waking up on the weekends to make brunch, some weekends more than others. When I feel less motivated to whip something magnificent up, I generally make a breakfast skillet. Luckily for me, it is my husband’s favorite breakfast (other than burritos). They are so simple to make and a good way to save random food in your fridge from spoiling. Here is what I came up with this morning, but you can substitute the vegetables, type of meat, etc.

This is a delicious breakfast even if you are not lazy, plus my husband is happy knowing he only has one pan to wash!

Instructions
  1. Using a oven safe skillet, cook the turkey bacon until crisp and remove from the pan, set aside until later. then Cut the potatoes into cubes and in the same skillet cook them on medium-high heat for about 15-20 mins.
  2. Chop the onions and pepper and add it to skillet. Drizzle with a little olive oil and season with salt and pepper. Once the potatoes are crisp and the vegetables are cooked reduce the heat to medium- low. Add your spinach to the pan and sauté for a couple of minutes
  3. Sprinkle in the cheese and let stand for a couple of minutes until it starts to melt. Set your broiler on low, then crack your eggs right into the skillet and season with salt and pepper.
  4. Place skillet in the broiler for about 3 -5 minutes. Once the eggs are partially cooked remove the skillet from the broiler and crumble your bacon over your eggs. Place the pan back in oven for another 3 minutes, then remove and serve .
