Finding healthy ways to make Italian food can be challenging. With all the carbs, cheese and heavy meat sauces you may find yourself feeling guilty after a meal. I recently swapped out my regular pasta and tried Modern Table Meals. This brand of healthy pastas are a delicious alternative to the traditional Italian variety. Made with bean and lentils, these pastas have 14g of protein and 5g of fiber without compromising any flavor. The pastas are also gluten, dairy, and soy free. They’re non-GMO Project verified and made without artificial colors or preservatives. Using 2 of their varieties, I made a yummy Turkey Sausage Marinara Penne and a Walnut Basil & Parsley Rotini. Basil Parsley Walnut Pesto
- 1 cup Gently packed fresh Basil leaves
- 1 cup Gently packed fresh Parsley leaves
- 2/3 cup Olive oil
- 1/3 cup Walnuts
- 2 cloves Garlic
- 1/2 cup grated Parmigiano-Reggiano
- Salt and pepper – to taste

Add walnuts to a food processor or blender and pulse until finely chopped. Next add basil, parsley, and garlic and continue to pulse until it forms a paste. Finally add grated cheese and mix until well incorporated.

Turn the blender back on and slowly drizzle in oil until the sauce reaches a smooth consistency and season with salt and pepper to taste.
Perfect Tomato Sauce
- 32oz Can of Whole Tomatoes
- 1/3 cup Olive oil
- 3 cloves Garlic – smashed
- 1 Tbsp Tomato paste
- 1/4 cup Fresh Basil – Bush Basil if available
- Salt and pepper – to taste

Add 1/3 cup of olive oil and 3 cloves of smashed garlic to a small sauce pan over medium heat. Cook until garlic turns golden brown and then remove the cloves from the pan. Add basil to the oil and then immediately add the entire can of tomatoes.

Let the sauce simmer over medium heat for about 45 minutes. Using a potato masher, smash the whole tomatoes to create a chunky sauce, stir in tomato paste, season with salt and pepper.
