If you love avocados as much as I do, then you”ll be pretty excited about this super simple breakfast or brunch recipe. The Avocado Smash has become the newest food trend for this delicious ripe green fruit. Very similar to that of guacamole, this smash up of avocados, citrus and crushed red peppers, on freshly toasted bread definitely makes breakfast the most important meal of the day.
For this brunch treat, I topped my crostini, (fancy way to say small slices of toasted bread) with poached eggs and smoked salmon lox, a surprisingly delicious combination! You can garnish your smash with your favorite brunch toppings, from tomatoes slices, to feta, or even prosciutto, just let your appetite and imagination be your guide.
The idea of serving this dish as a crostini makes it the perfect size for a brunch appetizer, but feel free to use whole slices of bread for an even more satisfying meal.
Recipe Notes:
- It is really difficult to mess up this recipe, except by adding too much lime or salt, so taste as you add.
- I used a par baked french bread loaf and sliced it on a diagonal
- I like chopping my tomatoes and adding them into the smash when serving with smoked salmon, but feel free to leave them out if it you wish!
