Who doesn’t like the idea of being able to prepare a meal in just one pot? I have seen a lot of buzz around one pot pasta, so I decided to try one for my family dinner. Since Asian food is a favorite in my house, I knew that was the way to go!
This recipe is easy to make and super flavorful, plus clean up is a snap. Just add all your ingredients into one pot, bring it to a boil and then reduce the heat and stir for about 10 mins. I do feature a few Asian ingredients in this recipe that you may not have on hand, so refer to my 10 Asian Pantry Itemsif you need a reference.
I played with this recipe a couple of times before finding just the right balance of spicy, garlic and ginger flavors. This one pot pasta is a meatless dish, so if you choose to top your noodles with chicken or shrimp, you will need an additional pan to cook your protein in.
In a large sauce pot, add your noodles, and all your chopped ingredients. Then add your wet ingredients, making sure your pasta is completely submerged in the broth and cover with the top.
Over high heat, bring your pot to a boil - this should take about 3-4 minutes. After your pasta starts to boil, reduce the heat to medium and stir. Place the top back on, but continue to check on your pasta and stir it every 2 minutes until most of the liquid has evaporated.
After 8 minutes check the tenderness of your pasta and reduce the heat to low for another minute. When the pasta is tender, serve immediately.
To crush your peanuts - you can use the side of your knife or bottom of a pan and press.
Since whole wheat pasta noodles aren't as firm, I would not recommend using them for this recipe.
This dish should be served in one seating, I find it does not work well as leftovers.
