mussels
Mussels & Spicy Turkey Sausage with Garlic Butter Sauce
musselsWhether you love or hate mussels, it's hard to resist spicy sausage in a finger licking white wine and garlic butter sauce! Mussels are a seafood that I actually grew to enjoy. The chewy texture wasn't initially appealing to me, until I realized I'd only been presented with overcooked  versions of this tasty underwater treat . When cooked properly, these little morsels of seafood goodness are perfect as an appetizer or can be deliciously tossed with your favorite seafood pasta. I added turkey sausage to this dish to make it more filling, and the flavors of fennel and spice gave it the extra kick I craved. The broth of a mussel dish can be the best part, so don't forget a loaf of crusty bread to soak it all up when serving.
Modern table pasta
Walnut Basil Pesto Pasta with Modern Table Meals
Modern TableFinding healthy ways to make Italian food can be challenging. With all the carbs, cheese and heavy meat sauces you may find yourself feeling guilty after a meal. I recently swapped out my regular pasta and tried Modern Table Meals. This brand of healthy pastas are a delicious alternative to the traditional Italian variety. Made with bean and lentils, these pastas have 14g of protein and 5g of fiber without compromising any flavor. The pastas are also gluten, dairy, and soy free. They’re non-GMO Project verified and made without artificial colors or preservatives. Using 2 of their varieties, I made a yummy Turkey Sausage Marinara Penne and a Walnut Basil & Parsley Rotini. See Recipe for these tasty sauces below!

The combination of cilantro, soy, ginger, jalapeno and lime is the perfect balance to the lean flesh of the tuna. The ingredients excite the dish by adding classic elements of sweet, salt, tang and spice. Pan seared tuna is finished in 2 minutes flat, enjoy as an appetizer served with crispy wontons brushed with sesame oil or as a  plated an entree.

Beef Rollatini Recipe
Beef Rollatini recipe It's time to be transported to Italy with Beef Rollatini. This is a dish that I'd never heard of before, but it's one I will definitely not forget. This recipe was prepared by my friend and chef, Frans Muller. He combined what I thought would be some unlikely flavors to create a dinner masterpiece. Beef Rollatini does require some prep, but it is a simple dish to make that will surely impress. The beef is rolled with a mixture of smoked mozzarella, toasted pine nuts, spinach and raisins. Trust me, it will be delicious until the last bite!

Ceviche time e
Mexican Style Ceviche
its Ceviche Time Ceviche (pronounced say-v- chay) could be, in my opinion, one of the most delicious ways to enjoy fish! This dish is typically made by curing or cooking the fish in just the juice from citrus fruit, like limes or lemons. This simple preparation allows for a plethora of flavor combinations to suit your taste. Since I am a huge fan of Mexican food, I went south of the border for this colorful appetizer. My mix of avocado, cilantro, tomato, jalapeno and corn made this ceviche a yummy Mexican treat.
