It's summertime which means it's also lobster season! For me, this dish is the ultimate feast! If you love lobster as much as I do, then this will definitely be a treat. Grilled lobster is the perfect meal to impress at your next dinner party, but this dish is also simple enough to serve any night of the week. For this recipe I par boiled the lobster and finished it on the grill along with the shrimp and corn to create a delicious salad that compliments the meal.
There is something spectacular about picking up your fork to dive into that perfectly cooked piece of fish and discovering it also has an amazing crispy skin. I am often asked how to master this seemingly advanced culinary task - I have to be honest, it is not as difficult it looks! Here is my guide for a truly crispy fish skin.
Salt and pepper shrimp (or) calamari is a dish I frequently order when at Chinese restaurants, but have never thought to make it at home. It is the perfect appetizer or can be served as a main course. I love that the shrimp has a crispy texture even without being heavily battered. The garlic and scallions add a lot of flavor without being overpowering. I typically like things spicy, but with this dish the jalapeno is just the right amount of heat. You can make this recipe with the mixed seafood or just choose your favorite, the preparation is simple and easy.
I have never been a fan of traditional potato salad with heavy mayo and lackluster flavor. That is why I love this recipe from Stop and Shop. In their Healthy Ideas video, I am mixing things up by adding a new twist with this Grilled Potato Salad. It combines tangy vinaigrette with grilled potatoes. You can grill your potatoes on your indoor grill or outside with the rest of the BBQ. This recipe is great for the summer, but it can be enjoyed all year long.
In honor of Cinco de Mayo my neighbor hosted an amazing party and asked me to assist her with the planning by bringing some of my delicious homemade Mexican dishes. I don't know the history behind Cinco de Mayo, but I do know it's a great excuse to eat some tasty Mexican food and Salud with Margaritas! The party featured my signature Guacamole Recipe, a tasty taco bar with a selection of chipotle chicken, grilled shrimp, ground turkey, chorizo and all the toppings you could ever need. I also made my Jalepeno Deviled Eggs, garnished with spicy chorizo. The highlight of the table were my Miniature Taco Salads, topped with some guacamole, crema and a slice of radish.
I am a salad fanatic, not because they are healthy, but because they can pack a lot of flavor and texture into one bite. This cannot be more true than with my Chicken Cobb Salad and Green Goddess Dressing. I have combined the smooth avocado texture with crispy pancetta and even took it one step further by crisping my chicken skin to add even more flavor. This recipe includes a herb packed homemade Green Goddess dressing with a tangy finish to add that extra kick this salad needs.
I truly love Kale! I can eat it all day long, so why not feature it as the star of my morning meal. For this breakfast I decided to step out of the traditional box with Lacinato kale salad tossed in a delicious lemon and caper vinaigrette with some poached eggs and crispy pancetta. It was so yummy and I am sure you will love it too.
I will be honest, we eat a lot of chicken in our house. It is a healthy alternative to the red meat binge we were on a few years ago. I love cooking chicken in a variety of ways, as seen in the many Chicken Recipes I have featured. There is nothing like a piece of juicy perfectly flavored chicken with crispy skin. The problem is this can be difficult to accomplish without frying your chicken in a pot of oil. I want to share with you my technique for achieving crispy skin nirvana with only 1 tablespoon of oil.
